## Summary

This video from Allrecipes.com demonstrates the versatile technique of one-pot cooking through two delicious recipes: a classic chicken and rice dish and a cheesy bacon ranch pasta. The host walks through a simple five-step method—searing, adding aromatics, toasting starches, adding liquid, and finishing—that can be adapted to countless ingredients and cooking appliances like Dutch ovens, Instant Pots, and slow cookers.

### Key Points

- **Step 1: Create Base Flavor by Searing** [00:16] — The first step is to sear a protein (like chicken) or roast vegetables to build a flavor base. Season with salt and pepper. If using a slow cooker, searing must be done in a skillet first.
- **Step 2: Add Aromatics** [01:13] — Add aromatic vegetables like celery, chilies, or shallots to the pot to build more flavor.
- **Step 3: Toast the Starch** [01:27] — Add the starch (rice, pasta, potatoes, or beans) and coat it in the fat from the pan. Adding a little butter can help with flavor and prevent sticking.
- **Step 4: Add Liquid and Deglaze** [01:53] — Add liquid (water, broth, or a combination) to deglaze the pan, lifting up the flavorful brown bits. For rice, use a 2:1 liquid-to-rice ratio. For pasta, use about 1 cup of liquid per cup of pasta.
- **Step 5: Finish and Serve** [02:32] — Add fresh green vegetables and finish the dish. This could involve baking in the oven or adding cheese and fresh herbs at the end. The video emphasizes not adding dairy too early to prevent curdling.
- **Recipe 2: Cheesy Bacon Ranch Pasta** [03:29] — The second recipe is a one-pot cheesy bacon ranch pasta with chicken and broccoli. It follows the same method, starting with cooking bacon and searing chicken in the drippings.
- **Pasta Cooking Tips** [04:59] — When adding pasta, bring the liquid to a simmer, then cover to ensure the pasta absorbs the liquid rather than it evaporating. Add back proteins and dairy at the end to avoid overcooking.
- **Conclusion and Versatility** [05:51] — The one-pot formula is highly customizable. Once you know the basic steps, you can create endless variations using whatever ingredients you have on hand.

## Transcript

recipes and it's going to make for perfect easy weeknight meals stick around for the recipe i've made method i used the term one pot cooking but it
will work if you're using an instant pot or your slow cooker or any of these types of pots and pans i love using a dutch oven that has a lid but probably my most favorite pan to use in one pot cooking
first i'm going to show you this whole technique using my family's rice so the first step is to create your base flavor by searing so this doesn't have to be a protein
most of the time it is i'm just simply seasoning them with salt and pepper weren't using meat you could also just roast your vegetables during this step now leave it alone if you're doing a
crock pot meal and you want to sear your food that's the one time you might have to sear in a skillet before adding it to the crock pot but that's what made the so popular because you can sear and slow cook in your instant pot
flavor on the bottom of the pan and no this chicken is not cooked through yet step step two is to add your aromatics and flavors in what i put in almost every one pot meal
other great vegetables that are aromatic to add at this point could be celery chilies or shallots the next step is to in this case i'm using rice and i want to coat it with the fat
there's probably enough fat in the pan already i'm going to add a little butter for extra insurance and flavor don't be alarmed about the brown bits that are that's flavor and those are going to come into the dish when we deglaze with
liquid in the next step other things you might add at this point are potatoes or beans all right next up we're going to extract adding liquid at this point it could just be water in
this dish i like to add a little more flavor by a little and chicken broth the brown bits come right off it's helping you clean the pot when it comes to knowing how much liquid to add with rice i stick to the same
ratio i would if i was cooking it the regular way so two to one is great just like cooking rice any other time you don't want to stir it too much and now we're gonna add our protein back in i like to keep the skin out of the
liquid so it stays crispy the next step is to let it finish all my meals generally include something green so to make this a true add your fresh green vegetables here i like to
add green beans it's not going to look as pretty so i'm not going to do it just know that you can i like to finish this off in the oven it gives me time to clean up the rest of my kitchen and it's just easy that way don't forget
ready when you are now if that doesn't scream comfort for the final step of the one pot method is to finish it off this dish i like to with a sprinkle of fresh parsley and brighten
you just have to try this for yourself to see that this is a lot more than just the flavor that is in this dish is amazing
you how that method works for a completely different dish as promised this is my favorite dish that i have been making one pot ever since i learned this method so i've created this
one pot cheesy bacon ranch pasta with chicken and broccoli it's delicious here we go again the first step is to create that base flavor cooked off some bacon and now i'm going to sear
to sear our chicken in the bacon drippings vegetarian dish you could start at this step the aromatics i'm using here are just shallots and garlic to keep it mellow
in addition to those aromatics i'm using ranch seasoning to really kick this up in my one pot method cooking depending on whether or not you want to coat your starch in fat or not
coat them in fat so i add the liquid first when it comes liquid to add when you're adding your starches with pasta you would if you were boiling it the traditional way a general rule of
thumb is about 1 cup of liquid per 1 cup of pasta for this dish i use water in combination with milk the milk is going to add some creaminess but that water is plenty of flavor you can save the broth for another dish
flavor on the bottom i'm going to bring my liquid to a simmer and then add in my pasta at this point i want the pasta to absorb the liquid i don't want it to evaporate out so i'm going to cover it
fresh ingredients in this case i'm going to add back in the chicken be mindful of the cook times i didn't do this i didn't do this right when i did step four because
pasta so i'm gonna add it in now check this out we're ready for the final step but look at this it looks creamy and we haven't even added the creamy part all right the final step finish it off
so this is when i'm adding the cheese and for extra cream you don't want to add this at the beginning because it will curdle and if you can't tell me that doesn't look good this is also
the time to cut the heat all the way down or off i mean i created this one complete meal for the family with minimal mess to clean up i finish it off with that bacon we cooked first
here's a little secret once you know the formula you can create using a little imagination and whatever you have in your pantry for even more one pot meals and inspiration check out our videos linked in the description
