These green ice cubes have solved a serious problem for me. So I grow a ton of cucumbers every summer for multiple purposes. My family consumes a ton of them fresh, but most of them get processed for either lacto-fermented pickles that stay in my fridge,
or jarred up shelf-stable pickles for the winter. But once my pickle needs are taken care of and the cucumbers are still flowing, I'll send the fresh cucumbers through my juicer, which are loaded with green juice, considering cucumbers are made up of 95% water.
But this is not your ordinary water. It's not only been naturally filtered through the roots and stems of the cucumber plant, but it's also packed with vitamins, minerals, electrolytes, and antioxidants, making it a hydration superfood.
So I'll pour the cucumber juice into large ice cube molds, which then get frozen overnight and transferred to a Ziploc bag for the freezer. Then I can take these cucumber ice cubes, throw them in a smoothie, pop them in a pitcher with some citrus and herbs for an amazing spa water.
But my favorite use is just throwing one or two in a water bottle That not only keeps my water cold, but creates a natural electrolyte and vitamin water that shits on the store-bought stuff.
