making leonise waffles from the place in
France called Leon I think I think
that's how they would spell it or say it
it's spelled l y n and uh we're making
their very special waffles and what
makes these special is really just
separating the eggs and whipping the
whites and folding them in right before
cooking them um and that should give
them this light Airy sort of melt iny
mouth texture that's really really good
I've used this technique before a lot
for pancakes but never for waffles um so
let's see how this goes right this is
one recipe from I guys I I love these um
these books if you're like interested in
just in food culinary especially French
The Rue Brothers incredible incredible
chefs they um they opened La gav rash uh
in London in
1967 right they brought that whole
French Cooking System over from France
to England and just blew up the scene
right making the most basically like I
think that restaurant was one of the
most expensive restaurants in the world
in the 9s I think it I think it had the
most expensive dinner but they're just
incredible chefs they trained you know
Marco Pierre White and Gordon Ramsey and
all those guys right they're like the
Godfathers of cooking they've both since
passed but amazing amazing resource they
have like five or six books out I have
them all I recommend you get one or two
if you like so starting with allpurpose
flour and in here we're going in with
the egg yolks right so I separated the
eggs the whites I have separate right
now just the
yolks got a question has the fridge
filed a restraining order yet um not yet
if you know if AI keeps going the way
it's
going the fridges are going to rise up
one day they're going to rise up and I'm
done I'm done now melted butter going in
this is something uh it's it's cooled
down so I just melted it I let it sit
for like 20 minutes it's not really hot
right um important distinction there
there I need my little scrapey
scrapey so straighten with the melted

here Sugar We're just saving a little
pinch of this sugar for the egg whites
later and just a little bit of salt a
little sweet a little
Savory you know any any good Chef will
or pastry chef will put a little bit of
salt in their uh in their you know sweet
desserts it just goes a long way now I'm
going to start by mixing this making
this little well right I made that
little well in the center so I can just
slowly pull in the flow from the outside
as you can see and that's coming
together
oh now and as I'm doing this I'm just
going to stream in little bits of whole
milk little by
little once this recipe is once this

so um this has got a sit for 30 minutes
to an hour but don't

want to talk about the perfect thing to

pancakes waffles this is it I'm telling
you this is so good all right we got

peanut butter cups in my ice cream I
like little crunchy things I like to
find those kind of things so that would
be like Ben and Jerry style ice creams
right um the peanut butter ice cream
anything with there's a little bit of
salt to go with that sweet I really like
so yeah pancake or waffle guy um you
know usually pancakes but I really like
waffles so we're trying that today um

easy you could maybe do this by hand I'm

that's pretty good but it won't be as
fluffy as this so I'm using a stand
mixer with the paddle attachment here

the aquarium like there was a boat it
was like two-sided situation and then
our eyes just kind of our eyes just kind
of caught and then I was like he was
like Hey I've watched your YouTube
channel all the time you're super
handsome cool guy do you want to can I
help you and I was like I'm not really
into it but sure you know and so that's
how we met yeah oh cool yeah we're going
to get a ton of comments so going in now
with 2 tablespoons of
honey you could use uh you could even do
Maple if you wanted but I I like honey
this is manuka honey it's good nice and
nice and healthy yeah I'll make up the
next origin story no my origin story was
good it was good um a touch of whole
milk in there that's really going to
help it get a little bit fluffier recipe
for this will also be down below and now
a little bit of
salt little bit of salt got to have the
salt in there and I have some
uh I have some vanilla beans here this
is mine dried out a little bit it's kind
of a
pain um guys never buy those vanilla
beans like in the supermarket where it's
like $13 for one bean you can literally
go on Amazon and get like 10 for like 10
bucks or 15 bucks and so that's what I
do except mine just the mine dried out
cuz I didn't seal it up properly so I'm
just splitting this I'm splitting this

literally one of my favorite
things it got it got a little warm now I
just had to like you know when you're
cooking sometimes things don't always
work out like you plan right so you got
to find ways to save things this looks
good right now but what I want to do is
stick it in the fridge for a few minutes
and then whip it up a little bit again I
think I'll get a little more air into it
and uh we'll keep going like that so
let's keep this here for now put this in
the
fridge we can start finishing the
uh finishing the batter right
so here's my batter this one's been
sitting for 45 minutes what we're going
to get now
is a
bowl here and egg whites
uh here we
go so this is the last thing we do right
we need to whip up these egg whites I'm
going to do it by hand to show you that
it is possible you know going to be
easier with a machine but you don't you
don't need the machine right so let's
start whipping
that really helpful to tilt the bowl
like
this uh get everything in one corner and
just whip what I'm doing is just going
straight back and forth I'm not doing
like circles right straight back and for
this is the fastest way to hand whip
something some people say like figure
eight or something I I just I tilt and I
go straight back and forth it always
worked for me now when it's a little bit
bubbly going in with a pinch of
sugar and we're not going to whip these
like stiff peaks they're going to be
like soft peaks or even a little bit
less anybody got a question I'm I'm I'm

it's we're never out of question
preferred way to clean cast
iron um you know a lot of times if you
can just wipe it out wipe it out you
know I say just keep it greased up I
don't like letting it dry out

watched the most um cuz like they're
they're like there's nothing fake about
it like they're really in this very very

ingredient and have to cook like they
know beforehand kind of kind of kind of
broke my world you know should we uh

parsnip puree right and I love like

how to work with that and what to serve
that with and so on and so forth but I
just couldn't make that video on YouTube
cuz it would just bomb you know so I'm

cooking process so I'll be in the midst
of it and then Marcus's going to throw
like jelly beans at me or or you know
whatever it is fish sauce I don't

a a little more you know when you're
whipping you can like go you're using
your wrist and then like your arm and
then and then you go up here and then
you switch back feel like keep working
different muscles then you can just keep
whipping just back and forth yeah yeah
yeah yeah yeah yeah yeah so look I'm
almost there just a little more I like
the way this
looks a little sweat going
yeah there we go
best way to store leftover fryer oil um
so yeah what I would what I would do let
going do a little more what I would do
with that is run it if you have a shinoa
that's best really fine mesh strainer um
that'll get out a lot of the debris and
keep the oil clean and therefore it will
last longer although if you don't have a
shinoa some people use like a
cheesecloth or I think people can even
use like coffee um what do you call that
coffee uh strainer not the you know the
filter filter coffee filters and so if
you want to take it to the next level
you could use like coffee filters
cheesecloth and a shin was strainer
that'll keep it really clean although
when I'm frying oil I just use the
shinoa I try to get like maybe three
uses out of it and then for me it
becomes worth it you know okay let's
leave it at that so that's like of soft
peaks I got to unplug this I'm going to
show that close maybe hm the Peaks close
yeah
they're uh they're they're they're
drooping a little bit it's kind of hard
to see but drooping a little bit over
almost got a little worked now here we
go I'm going to fold like maybe a third
of these into my batter
here and now like when you make the
batter you whisk but now you fold right
the whole point of these waffles is we
want a lot of air in here
so we really want to
fold so the motion is like that right
I'm turning as I'm coming over I'm
turning the spatula over like this right
so if I show you without batter it's
just like this so just bringing from the
bottom and then putting it back over the
top now when the first little bit of egg
whites has almost worked in we're going
to add another
third and just and just do the same
thing a lot of times I'll even out even
out the egg whites like

watching your videos and your brother's
restaurant is super I was going to say

brother makes the best Mexican food
she's she she lives where um my my

clarified butter here I don't think
doesn't really need to be clarified but

really nice and fluffy

could have happened uh I don't know I I

I'll just accidentally throw my hand in

would say one thing that comes to mind
is beef is uh Beef Wellington everybody
goes crazy the internet goes crazy for
beef
wellington it's so it's it's a it's a
lot of work and the thing you're missing
you're missing on that really hard sear
on the beef you know it's hard to beat
just like a really good steak you know
what I'm saying um like that flavor of
the sear the Char that that that you get
when you really Sear The Edge properly
and you miss that with the uh the tender
I don't know for for me that's just kind
of overrated dish you got a lot of
people hitting you up where they're from

time I've always when I make pancakes I
make it a similar way uh by whipping the
egg whites and it's just never a bad

friends we don't panic here
isn't that a big deal
man you know it is a big deal one time I
worked in a restaurant in Soma County
one of the first restaurants I ever
worked in it the the gas supply was a
huge tank that sat right outside of the
restaurant kind of like I don't know
maybe 30 ft from the kitchen right and
one day the guy was coming to fill up
the tank that's how it worked at that
place right he'd come and fill up the
tank and he was driving away and he left
his you know his uh his his pipe uh hose
connect that would fill up the tank he
left it connected he ripped the top the
guy drove away in his truck ripped the
top of the tank off gas is flying
shooting out like a geyser like 30 ft
into the sky and then off to the side
literally into the restaurant you know
there's a lot of fire in the kitchen so
someone just like comes in and just
yells like everybody get out people are
like jumping over counters chairs are
like flying down tables or just
everyone's just like jumping out the
chef is like trying to furiously blow
out all the pilots like so that the the
restaurant doesn't explode the smell of
gas was just like
overwhelming um it was like a huge it
was a huge ordeal and then obviously
there was just like to I don't remember
what happened after that but there was a
lot of emergency vehicles and um it was
very intense it was very intense so you
know a little spillage on a on a waffle
iron no big
deal no big
deal hey man kitchen are crazy places
you know I got I got lots of stories
like I mean that one's particularly
extreme but yeah it's just kind of wild
huh what's your favorite breakfast food
my favorite breakfast food um you
know maybe maybe Crepes maybe creps
although um I'm really simple you know
like the longer I cook the more simple I
am like for me like a perfect breakfast
is like really good bread you know
whether it's sourdough or whatever you
like like perfectly toasted some really
good butter little pinch of salt on the
bread some um perfectly cooked scrambled
eggs for me that setup is like that I I
don't need I don't need all the other
stuff you know what I mean like for me
that is just heaven right there um I'm
I'm I'm simple that that's me you know
if you want you know you want the works
that's fine too but I I really like I
think the longer I cook the just the
more simple I like my food what's the
hardest dish you've ever made the
hardest dish I've ever made um and have
you ever f failed making a dish have I
ever failed making a dish no no you guys
do I don't no I I'm sure I have sure I
have yeah there's things that have
there's things that have failed I mean
nothing comes to mind right now but toad
toad oh yeah yeah okay we yeah we had a
toad in the hole that failed that's
right we made toad in the hole it's the
oven's fault though yeah so when you
make toad in the hole you really want
this quick rise from your batter and our
my oven doesn't have a fan and so I've
made it before same exact batter
convection oven with a fan worked fine
uh without the fan was uh it didn't rise
you know wouldn't say it was like a
total fail but like it didn't work out
the way we we wanted just wasn't risen
enough um yeah but you know yeah things
things happen here we

another way to make a waffle yeah show

to make your waffle by hand it's a dumb

wrong kind of plate for what we're doing

it's a really good fish and chips I feel

between but I don't know when you get a
really good like fresh fish and a really
nice batter man that's good that's hard
to beat really good tartar sauce tartar
sauce we get some uh Cutlery oh my God

lemon the lemon zest is mad good mhm
especially this and
pancakes lemon zest makes it 10 times I
can't eat stacks of bread without some
sort of lightness you know what it needs

but so we're live and we would eat the
whole
pancakes we'll just keep eating it we're
eating it no we got to do something else

Gordon Ramsay video was that a question
that I
saw um so Gordon Ramsey does his
reactions you know and he uh he did one
for me and he tore me apart because I um
I used I made like little balls of
carrots um instead of using the carrots
that I cooked the meat with and
uh I didn't use I didn't use the carrots
I cooked the meat with because they had
been brazing for like 3 4 hours and they
were just mush and I'll said it before
I'll say it again Gordon Ramsey would
never serve those carrots like in his
restaurant right he just
wouldn't um and then and then sometime
later someone told me I haven't seen the
I haven't seen the video but they said
Gordon Ramsey made a recipe on his
account where he used the same exact
little balls of
carrots or like I I don't know right but
that's what that's what I was
told but I did I got to clear that up
with the Washington Post The Washington
Post literally contacted me me and wrote
an article you can look it up where I
got to defend myself about those carrots
it's really

when I'm when I'm not filming although
do make sushi rice bowls all the time
that's one of my favorite absolute

YouTube video on that so I'll make sushi
rice and then I'll have you know some
quick pickled cucumbers some other
pickled vegetables I'll have uh some
seaweed I'll have avocado whatever
seasonal vegetables on top and then I'll
have a protein whether it's you know
some some salmon tossed in ponzo or some
or some some grilled meat or chicken or
whatever it doesn't matter I mean it
doesn't have to be fish what are you
eating all

of here no I don't want you eating

what's something funny you saw happen to
somebody in the kitchen
um something funny
yeah oh man okay there's a lot in that
department a lot um I don't know if this
is funny I think it's kind of funny but
one time I locked um one of my
co-workers in a walk-in fridge huge
fridge very cold in there or was it a
freezer I think it might have been a
Freez freezer he was in he was in a
fridge or a freezer I don't remember but
then then I got I got busy I got pulled
inside and I went through like a 45
minute like Rush right and I forgot
about him like oh my god dude he's still
in there and I went out I went I went on
there and I unlocked him and he was just
like I'm going to kill you man just like
oh my I'm so sorry I'm so sorry I forgot
it was bad I felt so bad um um yeah and
just just crazy things like you end up
getting screwed over a lot in in
restaurants I have so many stories here
but my brother and I were getting
screwed over by uh we called her the
dragon lady she was like the new general
manager of the brewery where we're
working the brewery where we were
working and my brother and I were
running the daytime kitchen we had a lot
of responsibilities and she wasn't
paying us our o our OT man she owed us
OT she wasn't paying us our overtime and
this went on for weeks and we're like
she's screwing us she's screwing us so
we came up with a plan right before
lunch service we were going to we were
going to bail right and so what we did
is we we took tickets and we wrote on
them like like f you we quit and we like
we hung that up in the line so like they
would know my brother was in the getaway
car around the uh around the outside of
the building um you know near where they
kept the beer and then so I put up the I
put up the tickets he was out there I
ran out we're like leaving a restaurant
right before lunch service what are they
going to do there's nobody else there to
do it so I grabbed the beer got a couple
cases of beer threw it in my brother's
you know some old crappy car I forget
what it was and we zoomed out of there
man we zoomed out of there was such a
rush and we went straight to the
Petaluma outlet stores and bought
tracksuits because that is what you do
so we got tracksuits and um actually a
few months later I got my job back at
that same restaurant from the same
lady which was really weird ran out of
money and she was like you're welcome
back anytime and I was like damn she
kind of won she kind of won I you know
but you don't screw over your Cooks man
you got to pay them your OT or they're
going to bail on you like that so that
that was one of my favorite ones just
cuz just funny I don't know push donated
20 bucks yo thank you push thank you
push like that name push you know they
got more of a name I didn't say it cuz I
don't know if it's inappropriate the
Waffle's cold now it's not going to be
as good it's not going to be as good now
yeah but try and eat as much of it right
now quickly is like an end to the stream
you know what the waffle shove as much
your you just give like give a mush no

people and we got another question I'm
going go to bail
soon I don't know what I do the lives
Friday afternoon and I'm always so tired
maybe I should do them at a different
time but I think it's the best time for
us to do
