chicken adobo recipe here on YouTube and it was really well received. And upon going through the comments of this video, I found a secret ingredient that takes chicken adobo to a whole new level. So today, because I'm such a nice
dude, I'm going to tell you what it is. Now, let's go. Now, before we get to this cheeky little adobo hack, first we need to just make regular chicken adobo [music] end. It's how you finish the dish and it makes a world of difference.
Starting with soy sauce, next comes the vinegar and I'm using cane vinegar here, but a little note for you, because I know cane vinegar is hard to find. I had link for it down in the description if you want to get some, but if you can't,
works well, or just plain old white vinegar, which I think is highly Either one of those will do just fine. Now, we'll throw our garlic in here, as sergeant Gilbert reporting for duty. And I'm going pretty coarse with the pepper
Next, we're going in with our chicken thighs. And all I did with these thighs fat. Sometimes you get a lot of it just hanging off. And I'm doing seven thighs, which seems like the perfect amount for this recipe and this amount of liquid.

in later for a very good reason, which I'll tell you in a sec. This first needs What I'm going to do now is just take these out and dry them off. By all means, you don't have to do this next step. I'm going to sear them off cuz I
love the texture it gets on the skin. It just looks way better. But, you can by skipping this step. But hey, I'm going to do it the way that I like, so up that other side a little bit and we can get to searing. And to do that, you
want to cook these over medium heat, maybe even a touch under because of all will burn extremely [music] quickly, which is why I didn't put the sugar in add a little bit of oil to this pan and we'll drop these in skin side down.
of them, so you're going to have to do two batches if you're doing seven thighs like me. And we have a nice light little crisp on the skin and then I'll just hit removing and finishing the rest of my chicken in this same pan. Now, in that
same pan over medium heat, I'm going to add a bunch of julienned onions and after about 5 minutes, I'm going to add [music] water, all of our reserved marinade. Definitely don't throw that away. Sort of is the
dish. And then some brown sugar, but you could obviously just use white sugar in would also be good. And now all our chicken here, we're going to put in for now skin side down. And the way I set up this recipe in this size pan, it always
works out perfectly with uh seven thighs exactly as you can see. They should be almost submerged, something like this is perfect. And if you had any drippings on after pan searing, you might as well get all that flavor in there. And so
right now I have the heat high. That's just to get energy into the pan. Once I edges, I'm going to turn this down to like between low and medium, but closer to low cuz we just want a gentle simmer. Whenever you're cooking meat submerged
in a liquid, aka braising it like this, you definitely want it to be as gentle So, once we have that light simmer, I'm going to add a little cracked lid so it can breathe a little bit and we're going to set a 20-minute timer. And once 20
minutes has elapsed, this point, what I'm going to do is now flip them all back over so the skin side can begin to dry out. Now, at this point, we're going going to put that lid back on. Now, we

minutes, up to an hour is even better, but it's stressed now, and it needs to just the same way you would rest a steak after cooking. You should rest meat rested, I'm going to get them out onto a little mini sheet pan here because I
like to broil them last minute to retexture and recrisp that skin a little bit so it's not soggy. Again, you can absolutely skip this step, guys. You can mean, and not worry about any of it. It can be a lot easier than this. But not
gives it an incredible finished look, like it's a real crowd-pleaser. Feels And now I'm going to turn this sauce back on because our secret ingredient is about to be revealed and trust me, this just makes I don't know, I think it's
we are after about 5 minutes of reducing, it's thickened up a little bit. It's time for our secret ingredient, drumroll please. Coconut milk, which is something Filipino people do to make a creamy
version of chicken adobo. I mean, if you think about it, right? The soy sauce, the cane vinegar, that's all acidic. To have this coconut milk to cut through that acidity and balance out a sauce, much like adding cream or butter to some
sort of French sauce, it's the same idea with balancing it out and my god, I good. This is like Filipino gravy right here, insane. After adding the coconut milk, what I want to do is just reduce this down so it thickens up a little bit
minutes on the stove. And while that happens, this is the perfect time to you want to do this step, but be very careful when you do this because it can the sugar in the soy sauce. So for me, it'll be done in about 90 seconds, 2
always a good idea to do a few tray rotations just so these brown evenly. That's about 90 seconds, I'm going to go another 30 seconds or so. And there you have it, my friends. And the main reason I did that is because the skin was soggy
little bit of crunch to it. So [music] it's just tightened up and it you don't want to do it, not the end of the world. And so I actually reduced for about 6 or 7 minutes and I'm really happy with this kind of thickness. Coats
like overly thick. But if for some reason you want it thicker, just leaves out if you see them, they don't need to be there anymore. And now what I do is just drop the chicken back in skin side up. You know, I want to keep that
skin the way it is, so I don't cover it all in the sauce. And there we have it. over some white rice, garnish with some green onions, put a whole bunch of your sauce down and let's give this thing a taste with Marcus. Chicks adobo. I do
like the way that skin looks. It's not soggy.
