[0:02] [Music] Hi everybody. Today's recipe is jjimdak  or dakjjim, braced chicken with vegetables. It's   [0:11] very delicious, flavorful, and colorful. Also  generous, so it's perfect for enjoying with   [0:18] your family. These are glass noodles or starch  noodles. I'm going to soak these in cold water. [0:31] The soaking time needs around 40 minutes.  So meanwhile we are going to prepare all   [0:37] these ingredients. So it will be  a perfect time that we can start   [0:41] cooking. I use shredded green onions.  This is daepa, a large green onion,   [0:47] but you guys also can use just regular  green onions. Make a thin strips. [1:07] [Music] [1:08] I'm going to use this as a garnish later.  I used only half of a large green onion.   [1:15] This is also washed and soaked in  cold water to remove some spiciness. [1:31] This is my chicken. 2 pounds of chicken thigh. I   [1:37] washed and pat dried with my paper towels.  Cut into around 2 inch pieces like this. [1:53] Add a little bit salt [1:58] [Music] [2:02] and ground black pepper. [2:10] Just mix. [2:22] Noodles and green onion are soaking and chicken is  now just cut into bite-sized pieces. Ready? Next,   [2:30] let's make a sauce. 12 garlic cloves  and also some ginger around 2 teaspoons. [2:47] Just mix [2:53] and add 2 tablespoon soy sauce. [3:09] This is oyster sauce. add 2 tablespoons. [Music]   [3:18] Rice syrup gives a little shininess and sweetness   [3:25] but if you don't like to use  any sweetener, just skip it [3:33] and this is the kind of a secret! When you  go to andong jjimdak place, its color is   [3:42] very dark. They use a caramel sauce. It's kind  of their special color. So I I like to use the   [3:50] jjajang (black bean paste). You remember when  you make Korean jjajangmyeon, we use this black   [3:57] bean paste? In Korean chunjang, just use only  1 tablespoon. This is 1 tablespoon. Mix well. [4:14] Because of the rice syrup, the density is a little  sticky like this. Okay, These are the vegetables   [4:21] I'm using. Potatoes, I peeled and  soaked in cold water not to brown them. [4:33] And add onion. [4:40] Medium size 1 onion. [4:50] Mushrooms. [4:56] White mushroom. Two small  carrots. Cut like this thick. [5:13] Green chili peppers. [5:23] This red pepper is optional. [5:35] and cucumber. [5:44] We are going to use all of these. Oh these  are dried small red peppers. Now all you   [5:51] can do is to cook! Once we start cooking,  we'll get very busy, make us very busy!   [5:56] Be ready. Let's cook chicken, over medium  high heat. Cooking oil. add generous amount.   [6:04] I'm using canola oil, but you guys can  use any type of cooking oil. Add dried   [6:09] red pepper. They are turning a little  brown color. It's time to take these out. [6:23] This oil is very flavorful. Now it's time to  cook the chicken. It's going to be so loud.
