[00:05] making bread for 2 days straight or

[00:07] you're cooking up meals that take hours

[00:09] to produce but the truth is I'm busy

[00:13] just like all of you and a lot of times

[00:16] my meals do not look like that at all I

[00:18] get home from a busy day and I'm just

[00:21] trying to produce a meal in 15 minutes

[00:24] and that's what a pro home cook is still

[00:27] showing up when you're tired when you're

[00:29] busy to put food on the table and that's

[00:32] what today is all about I'm going to be

[00:34] showing you my top four 15minute meals

[00:38] those dishes that are super customizable

[00:40] that I continue to go back to when I'm

[00:43] either busy when I'm lazy or I just want

[00:46] a really delicious meal in a short

[00:49] period of

[00:51] time so first off here's the new set the

[00:53] new PR cook set it won't look like this

[00:55] for long and I'm not getting rid of the

[00:57] studio I'll explain all of that later

[01:00] but here's what we're working with now I

[01:02] wanted to film a video here before I

[01:05] renovate and make this more within the

[01:08] pro homecook Style just to have a little

[01:10] before to compare it to the after but

[01:12] that's coming over the next few months

[01:14] for now let's get into the recipes and

[01:15] the first recipe we're doing is a

[01:17] 15minute pasta just a quick tomato sauce

[01:21] and most people in a Flash would go for

[01:24] a can of tomato sauce like this or jar

[01:27] but today is about making 15-minute

[01:28] dinners that are still complet

[01:29] completely made from scratch that's the

[01:32] challenge and the best way to accomplish

[01:34] that are these babies right here cherry

[01:37] tomatoes why because they are packed

[01:40] with flavor they're packed with sugar

[01:43] you don't need to Stew them down for

[01:45] hours and hours to get a lot of flavor

[01:48] it's going to take a very short period

[01:49] of time first things first let's get a

[01:52] pot of water on the burner and just

[01:54] bring that up to a boil for the pasta

[01:57] next I'm going to get a pan on a burner

[01:59] pre heating on a low heat I'm going to

[02:02] dice up an onion nice and small so it

[02:05] Cooks quickly and I'll dump in a good

[02:07] bit of olive oil to coat the bottom of

[02:09] the pan and there's really not many

[02:11] ingredients so a high quality olive oil

[02:13] is really going to help you out so I'll

[02:15] throw the onions into the pan and start

[02:18] sweating them down and in the meantime

[02:20] I'll chop up some garlic and generally

[02:22] I'll just slice it because it's quicker

[02:24] and I find that it's a little easier to

[02:26] protect from burning when you got those

[02:27] bigger chunks I'll toss that in with the

[02:29] onions and cook everything down for a

[02:31] few

[02:32] minutes so I'm just sweating the onions

[02:35] and garlic you can see I'm not really

[02:37] getting too much color but that is a lot

[02:39] of Flavor now a lot of things are about

[02:41] to happen salty dump in these Tomatoes

[02:44] whole they'll pop they'll stew down put

[02:46] a lid on that so they start to break

[02:48] down now my water is boiling so I've got

[02:52] some pen here use whatever you want

[02:55] throw that in there I'm guessing that's

[02:57] like 7 or 8 minutes 12 to 14 minutes

[03:00] that seems aggressive this is a pretty

[03:01] vigorous boil I don't think it's going

[03:03] to take that long if it does we're

[03:04] already breaking rules so I'm going to

[03:06] keep my eye on that I'm going to keep my

[03:08] eye on that in the meantime I'm going to

[03:10] chop up some parsley you can use basil

[03:13] if you want and some Parmesan so

[03:15] typically I would microplan the parmesan

[03:18] right into the pasta but I don't have

[03:19] one right

[03:21] now I think that works sort of eh good

[03:25] not good so let's take a peek here so

[03:29] those tomatoes look amazing and

[03:30] typically I would take like a potato

[03:32] masher but I only have a few tools right

[03:35] now in this kitchen so let's see what I

[03:37] this might work and I just want to smash

[03:39] it's really going to speed up the

[03:43] process I'll turn that down to very low

[03:47] I'm telling you that took no time and I

[03:50] mean that looks pretty damn good to me I

[03:52] don't even have a spoon to try I'm using

[03:55] this

[04:24] noodles to suck up that sauce and to

[04:26] create a creaminess with all of that

[04:28] extra starch like right now that's

[04:30] looking a little bit weak noodles look a

[04:33] little bare take a little more of this

[04:35] create more sauce let that reduce and

[04:38] get thick okay now we'll get that cheesy

[04:41] in

[04:42] there a little more pasta water now it's

[04:46] looking so much better when it's at that

[04:49] point we'll add the fresh you can use

[04:51] basil too little water to just thin it

[04:54] out a bit transformation

[05:08] petite now don't extract 15 minutes the

[05:11] very first time you make this anytime

[05:13] you try something new it's going to take

[05:14] some time to get into the flow but this

[05:17] pasta dish right here is an absolute

[05:19] crowd pleaser the tomato sauce is loaded

[05:22] with depth of flavor it's got the

[05:23] sweetness got the creaminess the

[05:25] cheesiness perfect and you don't need a

[05:27] store-bought tomato sauce or tomato

[05:29] sauce that's going to take you an hour

[05:31] to make I wanted to hit multiple

[05:33] Cuisines giving you options plus that's

[05:35] how I like to eat so I'm going to do

[05:37] some Mexican food and generally with

[05:39] Mexican Cuisine you need a bunch of

[05:41] different elements to bring a dish

[05:44] together but if you make a

[05:46] quesadilla now that's something that can

[05:48] come together in under 15 minutes and

[05:51] that's what I'm going to do right now a

[05:52] quesadilla with a little twist I'm going

[05:55] to start off getting a sauté Pan

[05:56] preheating on a medium heat I'm using a

[05:59] nonstick but a stainless steel a carbon

[06:01] steel or a cast iron will work great for

[06:03] this as well first ingredient I'm

[06:05] prepping is the bacon so I'm going to

[06:07] chop up four pieces into small chunks

[06:10] get that sizzling away and rendering

[06:12] down in the pan now there's only a

[06:14] little bit more prep for this dish all

[06:16] I'm going to do is slice up a tomato

[06:18] nice and thin and for the cheese I'm

[06:21] using some fresh mozzarella and a little

[06:23] bit of spicy goua which is what I have

[06:25] but it's a quesadilla anything that

[06:27] melts will probably taste good what I

[06:29] like doing is tilting the pan a tad so

[06:31] you start deep frying that bacon in its

[06:33] own fat so you can finish it off with a

[06:36] nice even cook and I'm also going to

[06:38] save some of this extra fat for frying

[06:41] the quesadilla since we only need a

[06:43] little bit right now to sauté a whole

[06:46] bunch of spinach and the spinach is only

[06:48] going to take a minute to develop a

[06:49] little bit of color and to wilt down and

[06:51] you don't need any salt for that because

[06:53] there's plenty of residual salt in that

[06:55] fat from the bacon now all we have to do

[06:57] is Assemble two flour tortillas bottom

[07:00] layer mozzarella then I go on with the

[07:02] crispy bacon a nice even layer of

[07:05] spinach then about two to three slices

[07:08] of tomato per Dia and then sandwich that

[07:10] in with a top layer of spicy goua or

[07:13] whatever you have and smooshy smush so

[07:16] remember that save Bacon Fat well that

[07:18] goes back into the pan and I'm going to

[07:20] pop in those Dias and cope the bottom

[07:22] with fat and then flip them over right

[07:24] away making sure that one side doesn't

[07:27] absorb all of that fat in the cooking PR

[07:29] process and now my friends we fry which

[07:31] is actually a great time to get ahead of

[07:34] the cleaning always think about

[07:36] multitasking especially with these quick

[07:38] meals I know sometimes when we're

[07:40] preparing dinner it's a mad rush but it

[07:42] is nice to not be left with a huge mess

[07:45] at the end of your cooking process so

[07:48] I'm going to clean as much as possible

[07:49] while these quesadillas fry away

[08:04] folded quesadillas rather than stacking

[08:07] two are these beautiful folded edges I

[08:10] personally like a folded Edge piece

[08:13] better than a piece like that that's

[08:15] already leaking out the side this is a

[08:16] contained bite right here plus it's much

[08:19] easier to flip and make now there is one

[08:22] more thing totally not necessary this

[08:26] baby is loaded with flavor already but

[08:29] because I have it because I have it and

[08:31] yeah I'll throw a recipe in the

[08:33] description this right here is an

[08:35] avocado cilantro Crema you could

[08:37] probably make it within the 15 minutes

[08:39] if this is frying I was actually

[08:40] thinking about that

[08:45] dippy typical quesadilla is usually just

[08:47] cheese maybe some shredded meat I like

[08:49] adding as many veggies as possible to

[08:51] make it more of a complete meal it's

[08:53] just something that's super simple to

[08:54] make it's quick and you can replace out

[08:57] those ingredients with anything I make

[08:59] this with with eggs all the time really

[09:01] whatever I have in the pantry is being

[09:03] customized into my

[09:05] quesadillas so this next one is a noodle

[09:07] stir fry something I make all of the

[09:09] time and you knew a stir fry would make

[09:11] it on this list because they're super

[09:13] quick to bring together now it's

[09:14] inspired by aatu the popular Thai Dish

[09:17] but I'm certainly not calling this

[09:19] traditional because I customize this

[09:21] with whatever I have in my fridge or in

[09:23] my

[09:24] pantry bring together something really

[09:27] delicious but there is one traditional

[09:28] ingredient I got to go grab real

[09:34] quick everybody's hanging out over

[09:37] here except

[09:40] you oh jackpot I would say eggs are the

[09:43] one mandatory for this

[09:47] dish thank

[09:51] you this stir fry starts off with a base

[09:53] of onions and peppers and make sure you

[09:56] slice your veggies up pretty thin so

[09:58] they cook faster when you're trying to

[10:00] make a quick dinner I would suggest not

[10:03] using olive oil it's just the only thing

[10:05] I have in this kitchen right now use

[10:06] something more neutral for this dish

[10:08] just coating the

[10:10] Bottom now while the veggies are stir

[10:12] frying on a high heat I'm going to work

[10:13] on some aromatics I'm using ginger and

[10:16] garlic I'm going to slice through both

[10:17] of them separately and then I can

[10:20] combine them and rock a fine chop then

[10:22] those go into the pan and I'll stir fry

[10:25] everything together for a few minutes

[10:27] it's all about high heat and quick color

[10:29] for a stir fry like this which you can

[10:31] see is developing nicely here now over

[10:34] here I wash some Bak Choy but any greens

[10:38] will be great you can use spinach haale

[10:41] any leafy green but I love box choy cuz

[10:43] it holds up nice to the stir fry and

[10:45] I'll just go

[10:53] color I'm going to push them aside to

[10:55] make room for the eggs I'll crack in a

[10:58] few eggs give them a little scramble and

[11:01] incorporate that in with all of the

[11:03] veggies so I can stir fry everything

[11:08] together I'm going to shut out this

[11:10] brand right here they make a flat rice

[11:13] noodle specific for PSU but I've made

[11:16] this dish so many times with just rice

[11:18] noodles just make sure you soak them in

[11:21] cold water before if they're not fresh

[11:23] to hydrate them these don't need to be

[11:25] hydrated so now that that's in there I'm

[11:27] hitting it with the flavor little bit of

[11:29] sesame oil bit of rice vinegar for some

[11:32] Tang soy of course salty fish sauce

[11:37] Umami salty as well and then I'll add

[11:39] just a little bit of water to make sure

[11:41] those noodles

[11:45] hydrate so once the noodles are nice and

[11:48] softened that's when you can really

[11:50] start stir frying everything together

[11:52] getting some color on not just the

[11:54] veggies but also the

[11:56] noodles looking so good the last thing

[11:58] I'll do is I got some basil from the

[12:00] garden I'll throw that in there but you

[12:02] can use green onion or cilantro any type

[12:04] of fresh

[12:15] fry on the egg crispy egg you want a

[12:17] little bit of that fry in the noodle I

[12:19] love this dish because it's complete

[12:22] you've got protein in there you've got

[12:23] veggies you've got carbs it's fresh and

[12:25] salty at the same time super

[12:27] customizable like I said telling you

[12:29] these are the actual dishes I make all

[12:32] the time you master just a few that's

[12:34] all you need to be a good cook or at

[12:36] least enough so your partner stops

[12:38] complaining this last 15-minute meal is

[12:41] by far my laziest and I say that very

[12:44] respectfully because I think every home

[12:46] cook needs a few lazy go-to meals in

[12:49] their arsenal when they're truly just

[12:51] tired at night and they need food on the

[12:54] table that's generally where this baby

[12:56] comes out you know I love the air fryer

[12:58] and you've seen me do Wings in the air

[13:01] fryer now I ranked six different

[13:03] techniques of air fryer wings and the

[13:06] very best one takes about 35 minutes but

[13:09] the second best one takes just about 15

[13:11] minutes and that's what I'm going to

[13:12] show you and while this thing is air

[13:14] frying well I'm going to whip up a quick

[13:16] little side dish I've got 12 chicken

[13:18] wings here a little over a pound into a

[13:20] bowl dust with some flour your favorite

[13:23] spice mix and some salt and coat until

[13:26] they look like that b I would spray it

[13:30] but I don't have spray a little bit of

[13:31] oil rub that on there

[13:35] Wings 380 15 minutes just enough time to

[13:39] whip up a quick salad so this is a

[13:42] single portion salad dressing we've got

[13:44] some lemon juice little bit of sweetener

[13:47] I'm using maple syrup but you can use

[13:49] honey tiny bit of mustard little salt

[13:53] little Pepe

[13:56] whisk as simple as it gets right

[14:00] lemon Dijon goodness right there put

[14:03] that aside slice up some red

[14:08] onion paper thin little bit of

[14:13] radish pop that in I've got some tomato

[14:16] left over from the quesadilla put that

[14:18] into some

[14:20] cubes and then I've got these beautiful

[14:23] little gem lettuce leaves big ones I'll

[14:25] just break in half small ones I'll keep

[14:28] whole

[14:29] and toss so I filmed making this salad

[14:32] which always takes a little longer and I

[14:34] still have 5 minutes left to go so I can

[14:36] clean now which will save me clean up

[14:38] after I eat all right 22 seconds left
